CAVE PRIVEE BLANC
1990 Vintage: Bottle, Magnum and Jeroboam (75 cl, 150 cl, 300 cl)
Multi-faceted wines, complex and intense. The 1990 Vintage is both surprising and delightful. Already very expansive, it will continue to improve for another ten to twenty years. Based on a blend of 17 different crus, exclusively from the Grands and Premiers Crus. The black Pinot Noir grapes represent 2/3 of the blend, complemented by Chardonnay from the Côte des Blancs and Montagne de Reims, with a touch of Pinot Meunier.
Sensory Notes
Bottle
A lovely bronze/golden tinge to the colour. Effervescence is fine and long-lasting. An impressive nose that is intense and exceedingly rich, complex and concentrated from the start. Two types of fruit notes dominate: candied – almost cooked – fruits and citrus fragrances. Aerating the wine reveals vanilla notes of rare elegance, underpinned by mineral scents. On the palate, a forthright first impression quickly gives way to the structure. Hints of liqueur and candied citrus give the wine beautiful freshness. A voluptuous, long finish.
Magnum
Very rich golden/bronze robe with light, long-lasting effervescence. The nose presents a uniquely delicate aromatic complexity, underscored primarily by a paradox caused by the freshness of fruit notes and the maturity found in great wines that have aged long and slowly thanks to the magnum. The straightforward palate and zest are even more obvious than the bottle version. The finish is generous, structured and long. The 1990 Vintage Magnum promises terrific potential over the next 15 years.
Jeroboam
The robe is golden with glints of green. Effervescence is light and long-lasting. The nose is initially very fresh, fruity (pear, apricot) yet with mineral overtones. When swirled in the glass, more developed aromas of dried fruits and nuts come to the forefront. Much more mineral than the other bottles of this vintage, with effervescence that goes far beyond. The palate proves to be of impressive complexity from the very start, offering delightful freshness before its strength and voluptuousness emerge with a touch of stone fruit (white peach). The well-balanced finish reveals a very refined wine. The 1990 Vintage Jeroboam offers ageing potential of more than 20 years.
1980 Vintage: Bottle and Magnum (75cl and 150cl)
This fabulous vintage, with its typically Champagne style, elegant and perfectly balanced, offers impressive complexity as well as great ageing potential. Composed of wines produced from 26 Grands and Premiers Crus in the Montagne de Reims, the Grande Vallée de la Marne and the Côte des Blancs, the blend is made up of 53% Pinot Noir, 10% Pinot Meunier and 37% Chardonnay.
Sensory Notes
Bottle
The wine boasts a beautiful polished gold robe. Effervescence is subdued but still present. The nose is mature and incredibly complex, with fruity notes of jam (clementine), vegetal tones (dark tobacco) and woody aromas (cedar) against a background of spices. Balance in the mouth is perfect with an initial forthrightness giving way to an unending finish underpinned with pastry notes. Thanks to its tremendous ageing potential, the 1980 Vintage Bottle will continue to develop well for more than 6 years.
Magnum
The wine presents a gorgeous pale golden colour. The mousse is still very lively. The nose is astoundingly young and fresh given its age, thanks to the effect of the magnum and the recent disgorging. The aromas are concentrated along two lines: mineral – close to iodine, or even shellfish – and more mature scents of toast and roasted coffee. Its freshness can also be found on the palate with a zest that continues through to the finish, underscored by the inherent elegance of this magnificent vintage. The 1980 Vintage Magnum offers excellent potential for more than 10 years.

Sensory Notes
Bottle
Beautiful peachy pink colour with fine, long-lasting effervescence. The initial nose is enchanting, calling up notes of roast coffee, mocha and cocoa that give way to more complex aromas , with a mineral background typical of the red wines from Champagne. The flavour of forest fruits explode in the mouth underlining the structure and freshness, whereas the scent of citrus and candied figs with a delicate finish of dried figs enhance the wine’s silky acidity. A generous thrust carries through to a smooth finish reminiscent of dried fruit. The 1989 Vintage Rosé Bottle offers good ageing potential for more than 15 years.
Magnum
Salmon in colour with long-lasting, delicate bubbles. The first nose is enchanting with hints of chocolate, red jam and brioche…. As is true of the bottle vintage, these notes give way to more complex aromas with a mineral background typical of the red Champagne wines, although the magnum offers a fresher personality. On the palate, the striking aroma of red fruit aroma sets off the freshness of the nose. The fruits on the finish seem more mature, almost candied. Thanks to its tremendous ageing potential, the 1989 Vintage Rose Magnum will continue to develop wonderfully for more than twenty years.
1975 Vintage Rosé Magnum (150 cl)
Voluptuous and forthright, the 1975 Rosé will be particularly at its advantage at table. Sensory Notes
Very deep colour with peach and salmon tones, suggesting good ageing potential. Fine effervescence, a luxuriant nose with a fruity overtone dominated by ripe plum and cherries gives way to spicier aromas. The high level of red Bouzy wine can be recognized in the mouth: a tight palate with strong structure and a slightly tannic finish. The 1975 Vintage Rosé magnum will age well for over 10 years.
